- 2 tablespoons olive oil
- 1 cup long grain white rice
- 1 clove garlic (minced)
- 2 cups chicken broth
- 6 oz V-8 juice
- salt
- pepper
Instruction
- In a sauté pan over medium heat add your oil.
- Add in the rice and cook until the rice turns golden brown and has a nutty aroma.
- Stir in your garlic, chicken stock, and v8 juice.
- Bring the liquid up to a boil then cover and reduce the heat to low.
- Allow the rice to simmer for 20 minutes or until all the liquid is absorbed.
