Ingredients

The following ingredients have 2 Servings
  • 2 15- ounce cans Luck’s Pinto Beans (, undrained)
  • 1 tablespoon vegetable oil
  • 3 garlic cloves (, minced)
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 4.5 ounces canned green chilies (, drained)
  • ¾ cup cheddar cheese (, shredded)

Instruction

  • Heat vegetable oil in a heavy bottom sauce pan. Add minced garlic, cumin and cayenne pepper. Sauté for 1-2 minutes or until fragrant. 
  • Add both cans of Luck’s Pinto Beans, heat for 3-4 minutes. 
  • Using a potato masher or large fork, mash beans well until desired consistency. 
  • Fold in green chilies and shredded cheddar cheese. 
  • Serve immediately.
