Ingredients
The following ingredients have 2 Servings
- 2 15- ounce cans Luck’s Pinto Beans (, undrained)
- 1 tablespoon vegetable oil
- 3 garlic cloves (, minced)
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 4.5 ounces canned green chilies (, drained)
- ¾ cup cheddar cheese (, shredded)
Instruction
- Heat vegetable oil in a heavy bottom sauce pan. Add minced garlic, cumin and cayenne pepper. Sauté for 1-2 minutes or until fragrant.
- Add both cans of Luck’s Pinto Beans, heat for 3-4 minutes.
- Using a potato masher or large fork, mash beans well until desired consistency.
- Fold in green chilies and shredded cheddar cheese.
- Serve immediately.
