Ingredients
The following ingredients have 6 Servings
- 6 large bell peppers (red, green, yellow or orange)
- 1 pound Kroger® lean ground turkey
- 1/2 cup red onion (chopped)
- 2 cloves garlic (minced)
- 2 Tablespoons tomato paste
- 1 can Kroger® Black Beans (15 oz, drained and rinsed)
- 1 can Kroger® petite diced tomatoes (14.5 oz )
- 1 can Kroger® sweet corn (15 oz)
- 1 cup Kroger® tri-color quinoa (uncooked)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Juice of one lime
- salt and pepper to taste
- 2 cups Kroger® Sharp Cheddar Reduced Fat Cheese (divided)
Instruction
- Cook the quinoa according to package directions. Slice the tops of the peppers and clean out the membranes. Set aside.
- In a large skillet, brown the lean ground turkey. Right before it is fully cooked, add the red onion and garlic and cook until tender. Remove from heat.
- Add the tomato paste, black beans, diced tomatoes, sweet corn, quinoa, chili powder, cumin, lime juice, and salt and pepper to taste. Mix well and add 1 cup shredded cheese.
- Scoop the mixture into the insides of the peppers. Top with remaining cheese. Bake at 350 degrees for about 20 minutes until the peppers start to soften and the insides are heated throughout.
