Ingredients
The following ingredients have 7 Servings
- 1 pound boneless, skinless chicken breasts ((about 2-3 large breasts))
- 32 ounce container chicken broth
- 29 ounces diced tomatoes ((2 cans) )
- 1 1/2 cups carrots (, chopped )
- 1 1/2 cups celery (, chopped )
- 1 cup onion (, chopped )
- 1 cup red bell pepper (, chopped )
- 1 cup cilantro (, chopped )
- 1 1/2 cups water
- 1/4 cup tomato paste
- 2 teaspoons minced garlic
- 1 teaspoon Kosher salt
- 1 teaspoon cumin
- 1 teaspoon chili powder (, more to taste)
- 1/2 lime ((juiced))
Instruction
- Combine all ingredients in a crockpot and cook on low for 6-8 hours or high for 3-4 hours. Cook until the chicken shreds easily and the vegetables are tender. Shred chicken and then place back in crockpot.
- Ladle into bowls and serve with your favorite toppings.
