Ingredients

The following ingredients have 7 Servings
  • 1 pound boneless, skinless chicken breasts ((about 2-3 large breasts))
  • 32 ounce container chicken broth
  • 29 ounces diced tomatoes ((2 cans) )
  • 1 1/2 cups carrots (, chopped )
  • 1 1/2 cups celery (, chopped )
  • 1 cup onion (, chopped )
  • 1 cup red bell pepper (, chopped )
  • 1 cup cilantro (, chopped )
  • 1 1/2 cups water
  • 1/4 cup tomato paste
  • 2 teaspoons minced garlic
  • 1 teaspoon Kosher salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (, more to taste)
  • 1/2 lime ((juiced))

Instruction

  • Combine all ingredients in a crockpot and cook on low for 6-8 hours or high for 3-4 hours. Cook until the chicken shreds easily and the vegetables are tender. Shred chicken and then place back in crockpot.
  • Ladle into bowls and serve with your favorite toppings.
