The following ingredients have 4 Servings
  • 1 large onion (chopped)
  • 2 carrots (diced)
  • 2 ribs celery (sliced)
  • 2 bell peppers (chopped into 1/2-inch pieces)
  • 1 jalapeno chile (seeds removed and diced)
  • 4 cloves garlic (minced)
  • 1 tablespoon mild chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chipotle chile powder ((or to taste))
  • 1/2 teaspoon salt ((or to taste))
  • 2 15-ounce cans cooked beans ((pinto, kidney, or combination), drained)
  • 1 1/2 cups water
  • 1 15-ounce can diced tomatoes ((fire-roasted preferred))
  • 2 cups fresh or frozen corn ((thawed))
  • 1/2 cup medium grain bulgur wheat
  • additional seasonings (to taste)
  • lime wedges, jalapeño peppers, and fresh salsa (to serve)
