Ingredients
The following ingredients have 4 Servings
- 1 small red onion (thinly sliced)
- 1 red bell pepper (chopped (optional))
- 1 green bell pepper (chopped (optional))
- 1 10 oz pack grape tomatoes (quartered)
- 1 cup crumbled feta cheese
- 1 small English cucumber (peeled and chopped)
- salt (to taste)
- cracked pepper (to taste)
- 2 tbsp extra virgin olive oil
- 2 tsp red wine vinegar
- 1 tsp dried oregano
- zest of 1/2 small lemon
Instruction
- Soak the onion slices in a bowl of cold water to remove their acidic bite. Set aside.
- Whisk together all of the dressing ingredients.
- Place all of the salad ingredients into a large bowl and season with a little salt and lots of cracked black pepper. Drain and pat dry the onion slices on a piece of paper towel before adding them to the bowl.
- Add the dressing and gently fold the salad together, taking care not to break up the feta too much. Add more salt and pepper if needed before serving.
