  • 3 pounds assorted chicken pieces (bone-in breasts, thighs, legs and/or wings)
  • 12 oz cherry tomatoes on the vine
  • 1 can (15.5 oz) chickpeas - low sodium ((drained and rinsed))
  • 6 oz chopped cauliflower
  • ⅓ cup olive oil
  • 4 garlic cloves ((minced))
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • ¼ tsp ground coriander
  • 1 tsp salt ((use more according to your liking))
  • ¼ tsp black pepper
  • chopped parsley
