Ingredients
The following ingredients have 4 Servings
- 1.125 cups Rice
- 1.333 cups cherry tomatoes (washed and halved)
- 0.333 cup black Olives (stoned and roughly chopped)
- 2 scallions (washed, trimmed and cut into rings)
- 1 Cucumber (peeled, deseeded and diced)
- 1.333 cups Feta
- 4 Tbsps lemon juice
- 1 tsp honey
- 6 Tbsps olive oil
- Sea salt
- freshly ground peppers
Instruction
- COOK THE RICE
- Cook the rice according to the package instructions, then leave to cool.
- MIX THE SALAD INGREDIENTS
- Crumble the feta cheese and put into a bowl with all the prepared salad ingredients and the rice.
- DRESS AND SERVE
- Add the lemon juice, honey and olive oil and mix carefully. Season to taste with salt and pepper and serve in bowls.
