Ingredients

The following ingredients have 4 Servings
  • 1.125 cups Rice
  • 1.333 cups cherry tomatoes (washed and halved)
  • 0.333 cup black Olives (stoned and roughly chopped)
  • 2 scallions (washed, trimmed and cut into rings)
  • 1 Cucumber (peeled, deseeded and diced)
  • 1.333 cups Feta
  • 4 Tbsps lemon juice
  • 1 tsp honey
  • 6 Tbsps olive oil
  • Sea salt
  • freshly ground peppers

Instruction

  • COOK THE RICE
  • Cook the rice according to the package instructions, then leave to cool.
  • MIX THE SALAD INGREDIENTS
  • Crumble the feta cheese and put into a bowl with all the prepared salad ingredients and the rice.
  • DRESS AND SERVE
  • Add the lemon juice, honey and olive oil and mix carefully. Season to taste with salt and pepper and serve in bowls.
