Ingredients
The following ingredients have 4 Servings
- 4 burrito size tortillas
- 1 4 oz jar sun dried tomatoes packed in oil
- 1/2 cup pesto
- 12 slices mozzarella or provolone cheese
- 1 4 oz container crumbled feta cheese
Instruction
- In a large skillet over medium heat, pour 1/2 Tbsp of the sun dried tomato oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.
- On one side of the tortilla spread some pesto, lay 3 slices of cheese, some of the feta, and some of the sun dried tomato slices. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.
- Remove from pan and repeat with the remaining ingredients. Makes 4 quesadillas.
