Ingredients
The following ingredients have 4 Servings
- 1/2 cup orzo pasta (,uncooked )
- 1/3 cup diced red bell pepper
- 2 ounce can sliced black olives (,drained)
- 1 cup finely chopped spinach
- 1 whole scallion (,diced)
- 3 tablespoons crumbled feta cheese
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons extra-virgin olive oil
- 4 teaspoons red wine vinegar
- 1 teaspoon lemon juice
Instruction
- Cook orzo according to package directions, al dente, about 10 minutes; drain and transfer to a medium bowl.
- Toss in remaining ingredients.
- Taste and adjust seasoning to your liking.
- Serve warm or cool and enjoy!
