Ingredients

The following ingredients have 4 Servings
  • 1/2 cup pitted kalamata olives (chopped)
  • 1/2 cup goat cheese crumbles
  • 1/2 cup roasted red pepper slices
  • 1/4 cup store bought or homemade pesto
  • 4 rolls such as cibatta or other rustic bread roll (halved lengthwise)

Instruction

  • To make a sandwich, spread pesto onto bread, top with olives, red peppers and goat cheese.
  • Place sandwiches in a pan, place aluminum foil on top and then top with another heavy bottomed skillet to press the sandwiches. You can also do this in a panini maker. Cook on medium heat for 2 - 3 minutes or until bread is toasted and cheese has melted. Serve.
