The following ingredients have 8 Servings
- 2-15 ounce cans of chickpeas, (drained and rinsed)
- 1 English cucumber, (chopped into bite-sized pieces)
- 1/2 red onion, (finely diced)
- 2 cups yellow and orange bell peppers, (diced)
- 1/2 cup Kalamata olives, (sliced in half)
- 1/2 cup feta cheese, (crumbled)
- 1 avocado, (chopped)
- 1/4 cup fresh chopped herbs, ((I used mint and basil))
- salt and pepper to taste
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, (crushed)
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
