The following ingredients have 8 Servings
  • 2-15 ounce cans of chickpeas, (drained and rinsed)
  • 1 English cucumber, (chopped into bite-sized pieces)
  • 1/2 red onion, (finely diced)
  • 2 cups yellow and orange bell peppers, (diced)
  • 1/2 cup Kalamata olives, (sliced in half)
  • 1/2 cup feta cheese, (crumbled)
  • 1 avocado, (chopped)
  • 1/4 cup fresh chopped herbs, ((I used mint and basil))
  • salt and pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, (crushed)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
