The following ingredients have 6 Servings

- 3 tablespoons freshly squeezed lemon juice (from 1 ½ - 2 lemons)
- ½ of a small garlic clove, pressed
- 1 teaspoon kosher salt
- ½ teaspoon fresh ground black pepper
- 1 15-ounce can chickpeas, drained and rinsed
- 12-ounces sweet ripe cherry tomatoes or grape tomatoes, halved
- 1 hothouse cucumber, halved lengthwise, seeds scraped out, cut into ½-inch dice

- ½ of a small red onion, thinly sliced
