Ingredients
The following ingredients have 6 Servings
- 2 cups packed baby spinach
- 4 cloves garlic
- 2 tsp smoked paprika
- 1 tsp cumin
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp kosher salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- ¼ cup lemon juice
- ½ cup olive oil (extra virgin)
- 2 lbs boneless, skinless chicken breast (cubed)
- 1 cup hummus
Instruction
- Add the spinach, garlic, paprika, cumin, cinnamon, nutmeg, salt, black pepper, cayenne pepper, lemon juice and olive oil to a blender or food processor.
- Turn on and puree until smooth.
- Turn the blender off and pour the mixture into a large ziplock bag, add the chicken to the bag and toss together.
- Marinate for at least 30 minutes.
- Remove the chicken from the bag and skewer 6-8 pieces of chicken on 6 skewers. *If using wood skewers, be sure to soak in water for an hour before using.
- Grill the chicken skewers over medium heat for 5-7 minutes per side.
- Serve with hummus on the side for dipping.
