Ingredients

The following ingredients have 4 Servings
  • 1 head broccoflower
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons capers
  • 1/4 cup chopped pitted Kalamata olives
  • 1/4 cup chopped sun dried tomatoes
  • 1 shallot, minced
  • 1 tablespoon chopped fresh oregano
  • 1 lemon, ( juice only)
  • 2 tablespoons honey

Instruction

  • Preheat oven to 425 degrees F.
  • Remove the core of the broccoflower and cut down into florets; then rinse under cool water.
  • Place the broccoflower on a baking sheet and drizzle with oil; then bake for 15 to 20 minutes. Cool.
  • In a large bowl combine the broccoflower, capers, olives, oregano, lemon juice and honey. Mix well and keep refrigerated.
