Ingredients
The following ingredients have 4 Servings
- 1 head broccoflower
- 2 tablespoons Extra Virgin Olive Oil
- 2 tablespoons capers
- 1/4 cup chopped pitted Kalamata olives
- 1/4 cup chopped sun dried tomatoes
- 1 shallot, minced
- 1 tablespoon chopped fresh oregano
- 1 lemon, ( juice only)
- 2 tablespoons honey
Instruction
- Preheat oven to 425 degrees F.
- Remove the core of the broccoflower and cut down into florets; then rinse under cool water.
- Place the broccoflower on a baking sheet and drizzle with oil; then bake for 15 to 20 minutes. Cool.
- In a large bowl combine the broccoflower, capers, olives, oregano, lemon juice and honey. Mix well and keep refrigerated.
