Ingredients

The following ingredients have 4 Servings
  • 24 oz. chicken teriyaki pineapple meatballs
  • 1/4 c. Teriyaki or General Tso's Sauce (from Trader Joes)
  • 3 baby cucumbers (cut into strips)
  • 1 c. shredded carrots
  • 3 radishes (thinly sliced (using mandolin))
  • Fresh cilantro
  • Fresh mint
  • Fresh basil
  • Sliced green onion
  • 2 avocados
  • 2 mangoes (cut into strips)
  • Teriyaki (Siracha, or other favorite dipping sauce)
  • 1 head butter lettuce leaves
  • 1/2 cup chopped peanuts
  • Lime wedges

Instruction

  • Preheat oven to 350.
  • Assemble all fresh ingredients on your platter--cucumbers, shredded carrots, radishes, lettuce, mango, peanuts, dipping sauce, avocados, fresh herbs, and lime wedges—leaving room in the center for the meatballs. [You can set the plate down to fill up space while you are cooking the meatballs.]
  • Next, bake meatballs for 12 minutes in the oven (or follow baking instructions for meatballs on package if instructions vary).
  • Once baked, remove from oven and toss in 1/4 cup sauce. Plate in the center of the board and garnish with green onion. Assemble ingredients on lettuce leaf and enjoy!
