Ingredients

The following ingredients have 4 Servings
  • 1 lb chicken breast (boneless, skinless, cut into cubes)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup lemon juice
  • 1/3 cup Greek yogurt (I use Fage)
  • 1/8 cup red wine vinegar
  • 1 tbsp oregano
  • salt and pepper to taste
  • 3/4 cup Greek yogurt
  • 1 cup cucumber (finely diced)
  • 1 tbsp garlic (minced)
  • 1 tsp lemon juice
  • 1/2 tbsp parsley (or dill )
  • 2 cups grape tomatoes
  • 1 cup cucumber (diced)
  • 1 cup quinoa (cooked, I used black quinoa)

Instruction

  • Place the ingredients for the chicken in an Instant Pot. If you do not have an Instant Pot, see notes for alternative cooking methods. 
  • Close the Instant Pot and turn the valve to sealing. Set it to meat (or pressure cook) and cook 30 minutes. 
  • While the chicken cooks, prepare the tzatziki sauce by combining all ingredients together in a bowl. 
  • Place 1/4 of the quinoa, grape tomatoes, cucumber and tzatziki in each meal prep container along with 1/4 of the chicken. 
  • Store in the refrigerator up to 5 days.
