  • 2 egg yolks
  • 1/2 teaspoon salt
  • 1 teaspoon dijon mustard
  • 1/2 cup extra-light olive oil
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice

Instruction

  • Whisk, process or blend egg yolks with salt and mustard until smooth.
  • While whisking, or with motor operating, add oils in a thin, steady stream until dressing thickens. Add juice and a little hot water for a thinner consistency, if desired.
