Ingredients
The following ingredients have 6 Servings
- 3/4 cup matzo meal
- 1 TBS EACH minced fresh dill, fresh parsley (or 1 tsp EACH dried)
- 1 tsp salt
- 3/4 tsp baking powder ((see notes for Passover options))
- 1/4 tsp EACH onion powder, garlic powder
- 1/8 teaspoon pepper
- 3 large eggs
- 3 tablespoons schmaltz (see notes)
- 3 tablespoons chicken broth
- 1 pound bone-in-chicken thighs or breasts, skin removed (see options in notes)
- 2 tablespoons olive oil
- 1/2 tsp EACH salt, pepper
- 1 tablespoon chicken schmaltz ((may sub olive oil))
- 1 cup carrots, sliced ¼-inch thick
- 1 cup celery, sliced ½-inch thick
- 1 onion, diced
- 4-6 garlic cloves, minced
- 10 cups low sodium chicken broth (or homemade stock)
- 1 teaspoon chicken bouillon or better than bouillon
- 1 tsp EACH dried parsley, dried oregano, dried basil
- 1/2 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon fresh chopped dill, (more or less to taste)
