Ingredients

The following ingredients have 6 Servings
  • 3/4 cup matzo meal
  • 1 TBS EACH minced fresh dill, fresh parsley (or 1 tsp EACH dried)
  • 1 tsp salt
  • 3/4 tsp baking powder ((see notes for Passover options))
  • 1/4 tsp EACH onion powder, garlic powder
  • 1/8 teaspoon pepper
  • 3 large eggs
  • 3 tablespoons schmaltz (see notes)
  • 3 tablespoons chicken broth
  • 1 pound bone-in-chicken thighs or breasts, skin removed (see options in notes)
  • 2 tablespoons olive oil
  • 1/2 tsp EACH salt, pepper
  • 1 tablespoon chicken schmaltz ((may sub olive oil))
  • 1 cup carrots, sliced ¼-inch thick
  • 1 cup celery, sliced ½-inch thick
  • 1 onion, diced
  • 4-6 garlic cloves, minced
  • 10 cups low sodium chicken broth (or homemade stock)
  • 1 teaspoon chicken bouillon or better than bouillon
  • 1 tsp EACH dried parsley, dried oregano, dried basil
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon fresh chopped dill, (more or less to taste)
