Ingredients
The following ingredients have 4 Servings
- 1 cup green peas
- pinch of sugar
- 10 cashews
- 1/4 cup sugar
- 2 cups whole milk (boiled)
- 1/2 teaspoon cardamom powder
- few saffron strands
- Toasted chopped nuts (optional)
Instruction
- Shell and rinse the green peas once or twice.
- Bring whole milk to a boil and set aside.
- Add to the boiling water with a pinch of sugar and cook for 7-8 minutes. The peas should be soft and tender. Drain and rinse under cold running water.
- Transfer the green peas to a mixer jar. Add cashews, sugar and 1/8 cup boiled milk. Grind to a smooth puree.
- Add the green peas puree to the remaining milk and bring to a boil. Simmer for 6-7 minutes until the kheer thickens a bit.
- Add cardamom powder and saffron strands. Simmer for 2 more minutes. Remove from flame. Add toasted nuts if using, Serve matar ki kheer hot or chilled.
