Ingredients
The following ingredients have 4 Servings
- 3 cups curly green kale (stems removed)
- 1/4 cup cooked quinoa
- 1 tangerine
- 1 cup cherry tomatoes (halved)
- 1/4 cup sliced almonds
- 2 tablespoons extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt & pepper to taste
Instruction
- Add the kale to a large mixing bowl, add the quinoa and set aside.
- Whisk all the dressing ingredients together. Pour over the kale-quinoa mixture and massage with your hands until the kale has begun to soften and the dressing is fully incorporated. Separate onto two plates.
- Garnish each salad with half the tangerine, cherry tomatoes and sliced almonds. Serve immediately.
