Ingredients

The following ingredients have 4 Servings
  • 3 cups curly green kale (stems removed)
  • 1/4 cup cooked quinoa
  • 1 tangerine
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sliced almonds
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt & pepper to taste

Instruction

  • Add the kale to a large mixing bowl, add the quinoa and set aside.
  • Whisk all the dressing ingredients together. Pour over the kale-quinoa mixture and massage with your hands until the kale has begun to soften and the dressing is fully incorporated. Separate onto two plates.
  • Garnish each salad with half the tangerine, cherry tomatoes and sliced almonds. Serve immediately.
