Ingredients
The following ingredients have 8 Servings
- 2 kilogram potatoes, chopped coarsely
- 410 gram rindless bacon slices, chopped finely
- 1 cup (240g) sour cream
- 90 gram butter, chopped coarsely
- 3/4 cup (180ml) hot milk
- 4 green onions, sliced thinly
- 2 cup (240g) coarsely grated cheddar cheese
Instruction
- Preheat oven to 180°C/350°F. Oil 2.5-litre (10-cup) ovenproof dish.
- Boil steam or microwave potato until tender; drain.
- Meanwhile, cook bacon in a large frying pan, stirring, until crisp; drain on paper towel.
- Mash potato in a large bowl with sour cream, butter and milk until smooth. Stir in half the bacon, half the onion and half the cheese. Season. Spread mixture into dish; sprinkle with remaining bacon, onion and cheese.
- Bake for 40 minutes or until browned lightly.
