Ingredients
The following ingredients have 4 Servings
- 1/2 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1/4 cup minced cilantro
- 1 cup grated cheddar cheese
- 1 tsp cayenne
- 1 tsp garam masala
- salt (to taste)
- black pepper (to taste)
- 10 eggs
- 2 1/2 cups half and half
- 3 tbsp olive oil
Instruction
- Preheat oven to 300F
- Heat 2 tbsp oil in a saute pan. Add the onion and peppers to it and saute till the onion is translucent.
- Remove from pan and keep aside.
- Cut up the sausage into bite sized pieces and saute in the same pan for 3-4 minutes.
- Grease a 9x13" casserole dish with the remaining 1 tbsp olive oil. Add the cooked vegetables and sausage to this.
- Add the cheese and cilantro to it too. Mix well.
- Beat the eggs in a mixing bowl. Add the salt, black pepper, cayenne, garam masala and the half and half to it. Mix well.
- Pour this over the vegetables and sausage in the casserole dish.
- Bake in the oven for 40-50 mins till the center of the casserole reads 160F.
- Remove from oven, let it cool for 10 mins and then cut and serve.
