Ingredients

The following ingredients have 4 Servings
  • 2 tbsp. soy sauce or tamari
  • 2 tbsp. lemon juice
  • 2 tbsp. agave or maple syrup
  • 1 tbsp. tomato paste
  • 2 tsp. vegetable oil, (omit for oil free)
  • 1 1/2 tsp. fresh grated ginger
  • 2 garlic cloves, (minced)
  • 1 1/2 tsp. garam masala
  • 1/4 tsp. black pepper
  • 1 lb. extra firm tofu, (drained, patted dry and cut into 1/2 inch cubes)
  • 1/4 cup fresh cilantro leaves
  • 1 cup basmati rice
  • 1 3/4 cups water
  • 1 1/2 tsp. black mustard seeds, (optional, but really nice)
  • 1 tbsp. vegetable oil, (omit for oil free)
  • 1/4 tsp. turmeric
  • salt to taste
  • about 2 cups fresh spinach leaves, (lightly packed)
  • 1/4 cup roasted cashews
  • 2 scallions, (chopped)
