Ingredients
The following ingredients have 4 Servings
- 2 tbsp. soy sauce or tamari
- 2 tbsp. lemon juice
- 2 tbsp. agave or maple syrup
- 1 tbsp. tomato paste
- 2 tsp. vegetable oil, (omit for oil free)
- 1 1/2 tsp. fresh grated ginger
- 2 garlic cloves, (minced)
- 1 1/2 tsp. garam masala
- 1/4 tsp. black pepper
- 1 lb. extra firm tofu, (drained, patted dry and cut into 1/2 inch cubes)
- 1/4 cup fresh cilantro leaves
- 1 cup basmati rice
- 1 3/4 cups water
- 1 1/2 tsp. black mustard seeds, (optional, but really nice)
- 1 tbsp. vegetable oil, (omit for oil free)
- 1/4 tsp. turmeric
- salt to taste
- about 2 cups fresh spinach leaves, (lightly packed)
- 1/4 cup roasted cashews
- 2 scallions, (chopped)
