Ingredients

The following ingredients have 4 Servings
  • 2 cloves garlic cloves (finely chopped)
  • 2 Tbsps balsamic vinegar
  • 0.5 cup good-quality olive oil
  • 2 sprigs thyme (finely chopped)
  • 2 sprigs oregano (finely chopped)
  • 1 sprig rosemary (finely chopped)
  • coarse salt (to taste)
  • freshly ground Black pepper (to taste)
  • 3 small zucchini (peeled in strips and thickly sliced)
  • 2 ears Corn (husks removed and thickly sliced)
  • 1 red Bell pepper (cut into bite-size pieces)
  • 1 yellow Bell pepper (cut into bite-size pieces)
  • 1 green Bell pepper (cut into bite-size pieces)
  • 4 sweet onions (peeled and cut into quarters)
  • 4 sprigs fresh rosemary
  • wooden Skewer (soaked in cold water for 30 minutes)

Instruction

  • For the Marinade:
  • In a small bowl, mix together the garlic, vinegar, oil, herbs, salt and pepper. Set aside.
  • For the Kebabs:
  • Prepared the grill for direct grilling. Preheat to medium-high heat.
  • Skewer the vegetables and rosemary sprigs onto the presoaked wooden skewers, brush generously with marinade. Arrange the skewers on a vegetable grate or directly on the hot grill grate. Brush with marinade occasionally and turn for even cooking, grill 8 to 10 minutes. Serve.
