The following ingredients have 6 Servings
- 3 Tablespoons white wine vinegar
- 3 Tablespoons extra-virgin olive oil
- 1 Tablespoon flat leaf parsley fresh, minced
- 1 Tablespoon Dijon mustard
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon kosher salt
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1 (15 oz.) can chickpeas rinsed, drained
- 1 cup broccoli florets
- 1/2 cup red onion sliced
- 1/2 cup red bell pepper diced
- 1 carrot peeled, sliced
- 1/4 cup kalamata olives pitted
- 6 Tablespoons feta cheese crumbled
Instruction
- Whisk together ingredients for dressing in a bowl. Combine chickpeas, vegetables, and olives in a large bowl. Toss to coat with dressing. Cover and marinate in the refrigerator 30 minutes to overnight, tossing occasionally. Garnish each serving with feta cheese.
