Ingredients

The following ingredients have 6 Servings
  • 3 Tablespoons white wine vinegar
  • 3 Tablespoons extra-virgin olive oil
  • 1 Tablespoon flat leaf parsley fresh, minced
  • 1 Tablespoon Dijon mustard
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 (15 oz.) can chickpeas rinsed, drained
  • 1 cup broccoli florets
  • 1/2 cup red onion sliced
  • 1/2 cup red bell pepper diced
  • 1 carrot peeled, sliced
  • 1/4 cup kalamata olives pitted
  • 6 Tablespoons feta cheese crumbled

Instruction

  • Whisk together ingredients for dressing in a bowl. Combine chickpeas, vegetables, and olives in a large bowl. Toss to coat with dressing. Cover and marinate in the refrigerator 30 minutes to overnight, tossing occasionally. Garnish each serving with feta cheese.
