Ingredients

The following ingredients have 8 Servings
  • 1 ½ cups grape tomatoes (chopped)
  • 1 cup carrots (diced)
  • 1 cup yellow bell pepper (chopped)
  • 1 ½ cups cucumber (chopped)
  • 1 cup green cabbage (or red cabbage*, chopped)
  • 1 cup cauliflower pieces
  • 1 cup zucchini
  • 1 ½ tablespoons fresh dill (chopped)
  • 2 tablespoons fresh parsley
  • ½ cup vegetable oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon Italian seasoning
  • 1 teaspoon sugar
  • salt and pepper

Instruction

  • Combine all dressing ingredients in small bowl or jar. Whisk (or shake) to combine.
  • Chop all ingredients and place in a large bowl. Toss with dressing and refrigerate at least 2 hours before serving stirring occasionally.
