Ingredients

The following ingredients have 6 Servings
  • 2 kilogram chicken wings, tips removed
  • 1/3 cup dark soy sauce
  • 1/3 cup honey
  • 2 tablespoon vegetable oil
  • 6 clove garlic, crushed
  • 500 gram whole plums, quartered, stone removed
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 4 clove garlic, chopped
  • 1 4cm piece ginger, chopped
  • 1/2 medium brown onion, chopped
  • 1 teaspoon salt
  • 2 small fresh red chillies, seeded, finely chopped
  • 3 star anise
  • 1 stick cinnamon
  • 1/3 cup caster sugar

Instruction

  • Preheat oven to hot, 200°C (180°C fan-forced).
  • Halve wings into drumettes or wingettes; place into a large roasting dish.
  • Mix remaining ingredients and pour over chicken. Mix well to coat evenly; roast 25-30 minutes, or until chicken is cooked and sticky.
  • Meanwhile, to make plum sauce, combine all ingredients in a medium saucepan; bring to the boil. Reduce heat; simmer 15 minutes, or until plums, garlic, ginger and onions have softened completely. Remove star anise and cinnamon; push mixture through a coarse sieve.
  • Serve chicken with plum sauce.
