Ingredients

The following ingredients have 4 Servings
  • 1/4 cup olive oil
  • 1 cup yellow onion, (finely chopped)
  • 1/4 cup carrot, (finely grated)
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, (minced)
  • 1 (28 ounce) can crushed tomatoes, (with juices)
  • 1 (6 ounce) can tomato paste
  • 3 teaspoons Italian Seasoning
  • 2 bay leaves
  • 1/2 cup water

Instruction

  • Heat the olive oil in a large pot. Add the onion and saute, over medium-high heat, until soft, about 5-6 minutes. Add the grated carrot, salt, and pepper and saute until soft. Reduce the heat to low and add the garlic. Saute until fragrant, about 1 minute.
  • Add the rest of the ingredients. Simmer on low, uncovered, until the sauce thickens, about 1 hour. Thin, if need, by adding water.
  • Remove bay leaf. Adjust seasoning and serve.
