Ingredients

The following ingredients have 30 Servings
  • 2 plum tomatoes (diced)
  • 1 clove garlic (minced or pressed)
  • pinch of salt and pepper
  • 1 teaspoon olive oil
  • 2 boxes Athens® Mini Fillo Shells (30 shells)
  • 8 ounces fresh mozzarella cheese (1/4" dice)
  • small handful fresh basil (sliced into thin ribbons)

Instruction

  • Preheat oven to 400°.
  • In a large bowl combine tomatoes, garlic, salt and pepper, and olive oil.
  • Fill the Fillo shells with the diced mozzarella. Bake for 5 minutes or until the cheese is melted. Remove from oven and top with prepared tomatoes.
  • Bake for an additional 5 minutes to soften the tomatoes. Remove from the oven and top with fresh basil.
