Ingredients
The following ingredients have 30 Servings
- 2 plum tomatoes (diced)
- 1 clove garlic (minced or pressed)
- pinch of salt and pepper
- 1 teaspoon olive oil
- 2 boxes Athens® Mini Fillo Shells (30 shells)
- 8 ounces fresh mozzarella cheese (1/4" dice)
- small handful fresh basil (sliced into thin ribbons)
Instruction
- Preheat oven to 400°.
- In a large bowl combine tomatoes, garlic, salt and pepper, and olive oil.
- Fill the Fillo shells with the diced mozzarella. Bake for 5 minutes or until the cheese is melted. Remove from oven and top with prepared tomatoes.
- Bake for an additional 5 minutes to soften the tomatoes. Remove from the oven and top with fresh basil.
