Ingredients

The following ingredients have 6 Servings
  • 2 lbs. carrots
  • 1/4 cup pure maple syrup
  • 2 tbsp. Dijon mustard
  • 1 tbsp. white wine vinegar
  • 2 tbsp. coconut aminos
  • 1 garlic clove (minced)
  • 1/2 tbsp. dried oregano
  • 2 tbsp. olive oil
  • Fresh parsley (to garnish)
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat oven to 400 F.
  • Combine the maple syrup, Dijon mustard, vinegar, coconut aminos, garlic, oregano, salt, and pepper in a large bowl.
  • Toss the carrots in the maple syrup mixture until well-covered.
  • Place the carrots on a baking sheet, pouring the remaining liquid over the carrots.
  • Place in the oven and bake for 25 to 30 minutes, turning at the halfway point.
  • Serve the carrots topped with chopped fresh parsley.
