Ingredients
The following ingredients have 6 Servings
- 2 lbs. carrots
- 1/4 cup pure maple syrup
- 2 tbsp. Dijon mustard
- 1 tbsp. white wine vinegar
- 2 tbsp. coconut aminos
- 1 garlic clove (minced)
- 1/2 tbsp. dried oregano
- 2 tbsp. olive oil
- Fresh parsley (to garnish)
- Sea salt and freshly ground black pepper
Instruction
- Preheat oven to 400 F.
- Combine the maple syrup, Dijon mustard, vinegar, coconut aminos, garlic, oregano, salt, and pepper in a large bowl.
- Toss the carrots in the maple syrup mixture until well-covered.
- Place the carrots on a baking sheet, pouring the remaining liquid over the carrots.
- Place in the oven and bake for 25 to 30 minutes, turning at the halfway point.
- Serve the carrots topped with chopped fresh parsley.
