Ingredients

The following ingredients have 4 Servings
  • 2 cups oats (old fashioned or quick cooking)
  • 4 cups water
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup pure pumpkin
  • 1/4 cup pure maple syrup
  • 1/4 cup chopped walnuts
  • 2 tablespoons chia seeds

Instruction

  • Bring water and spices (cinnamon through salt) to a boil whisking occasionally.
  • Stir in oats then return to a boil. Reduce heat to low and cook until liquid is absorbed, about 6-8 minutes.
  • Stir in pumpkin, syrup, walnuts and chia seeds. Cook additional 2-3 minutes or until pumpkin is warmed through.
  • Serve in 4 bowls.
