Ingredients
The following ingredients have 24 Servings
- 3 1/2 cups unsalted nuts (e.g. pistachios, walnuts, cashews)
- 1/3 cup maple syrup
- 1/4 tsp salt
- 2 tbs coconut oil
- 1 tbs water
- 1 tsp vanilla extract
- 2 cups whole wheat pretzels
- 1/2 cup chopped dried apricots
- 1/2 cup raisins
Instruction
- Place the nuts in a slow cooker. In a small bowl, stir together the syrup, salt, coconut oil, water, and vanilla extract. Pour the mixture over the nuts.
- Cook the nuts on low for 1 1/2 to 2 hours, stirring every 15 minutes. They’re done when the liquid has been absorbed and the nuts begin to turn brown. (Alternately, you could roast the nuts in the oven if you don’t have a slow cooker.)
- Transfer the nuts to a foil-lined baking sheet to cool.
- In a large bowl, combine the nuts, pretzels, and dried fruit. Store in an airtight container for up to 5 days.
