Ingredients
The following ingredients have 12 Servings
- 1-1/2 cups cranberries (dried or fresh)
- 3/4 cup granulated sugar (divided)
- 2-1/4 cup all-purpose flour
- 2-1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1 tsp vanilla
- 1 egg
- 1 tsp grated mandarin-orange zest
- 7/8 cup mandarin-orange juice
- 3/4 stick (0.4 cups butter, melted)
- 3/4 cup chopped nuts (optional)
- 2 tbsp all-purpose flour
- 2 tbsp granulated sugar
- 1.5 tbsp butter
Instruction
- Preheat oven to 375 F. Coarsely chop cranberries and mix with 1/4 cup sugar. Set aside.
- Place streusel ingredients into a small bowl and combine with you fingers until mixture is crumbly.
- Line a muffin tray. In a bowl combine flour, 1/2 cup sugar, baking powder and soda, salt and vanilla.
- In another bowl beat the egg and add mandarin-orange zest, juice and melted butter.
- Add dry mixture to wet ingredients and stir until just combined. Mix in cranberries and optional nuts.
- Fill 12 muffin liners with the batter, sprinkle streusel crumbles on top and bake for 15-20 minutes until muffins are golden brown.
