Ingredients
The following ingredients have 16 Servings
- 1/4 cup turkey drippings
- 4 cups turkey broth (warmed)
- 1/2 cup unsalted butter
- 1/2 small onion (minced)
- 1/2 cup flour
- 2 tablespoons brandy
- 2 tablespoons cream
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1 teaspoon salt ((to taste))
- 3-4 pounds turkey parts/carcass
- 4 cups chopped vegetables ((carrots, onion, celery, other vegetable scraps))
- 2 bay leaves
Instruction
- Pour the drippings in a small glass bowl and set aside until ready to use.
- Add the butter to the turkey drippings in a skillet and heat to medium heat.
- Add the flour and stir to combine until a paste forms. Cook, stirring constantly, for about 2 minutes.
- Add the minced onions and cook for 1 minute.
- Add the brandy, cayenne pepper and black pepper. Slowly stir in the broth, 1/2 cup at a time until a gravy forms.
- Stir in the cream and salt. Add additional salt to taste if desired.
