Ingredients

The following ingredients have 16 Servings
  • 1/4 cup turkey drippings
  • 4 cups turkey broth (warmed)
  • 1/2 cup unsalted butter
  • 1/2 small onion (minced)
  • 1/2 cup flour
  • 2 tablespoons brandy
  • 2 tablespoons cream
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt ((to taste))
  • 3-4 pounds turkey parts/carcass
  • 4 cups chopped vegetables ((carrots, onion, celery, other vegetable scraps))
  • 2 bay leaves

Instruction

  • Pour the drippings in a small glass bowl and set aside until ready to use.
  • Add the butter to the turkey drippings in a skillet and heat to medium heat.
  • Add the flour and stir to combine until a paste forms. Cook, stirring constantly, for about 2 minutes.
  • Add the minced onions and cook for 1 minute.
  • Add the brandy, cayenne pepper and black pepper. Slowly stir in the broth, 1/2 cup at a time until a gravy forms.
  • Stir in the cream and salt. Add additional salt to taste if desired.
