Ingredients
The following ingredients have 6 Servings
- 2 cooked skinless boneless chicken breasts, (diced)
- 10 dried apricots (cut into small pieces)
- 1 stalk celery (diced)
- 1 green onion (thinly sliced)
- 1/4 cup + 2 tablespoon plain nonfat Greek yogurt
- 1 1/4 teaspoons curry powder
- 1/4 - 1/2 teaspoon salt (to taste*)
- pepper (to taste)
- 1/4 teaspoon ground pepper
Instruction
- In a medium-sized bowl, mix together the chicken, dried apricots, celery, green onion, Greek yogurt, curry powder and salt. Adjust the seasoning, to taste.
- Serve on bread or crackers, or over a bed of lettuce.
