Ingredients
The following ingredients have 4 Servings
- 1 lb asparagus, made into noodles*
- 1 tablespoon butter
- 1/2 cup heavy cream
- 2 tablespoons lemon juice and zest of 1/2 lemon
- 1 tablespoon dijon mustard
- 2 cloves garlic, crushed
- 2 tablespoons Parmesan cheese (more if sprinkling on top)
Instruction
- Need to add cheese to cals
- Start by making the aspraagus noodles. First cut of the tops and save to eat later or add to this dish if you want. Hold the aparagus by the woody end and using a vegetable peeler, make ribbon noodles. All you should have left is the woody stem and part of the spear.
- To make the sauce, add the cream, mustard, lemon juice, zest and garlic to a small sauce pan. Whisk and bring it to a simmer. Cook for 5 minutes and add the parmesan cheese. Whisk again until the cheese is melted and well incorporated.
- In the meant time microwave the apsaragus noodles for about 2 minutes. I like mine al dente but if you want them softer, cook for another minuter ot so.
- Pour over the sauce and add more Parmesan cheese on top if you wish. Note you might have extra sauce and this is great on chicken or fish too!
