Ingredients

The following ingredients have 7 Servings
  • ½ cup shelled raw peanuts ((85g))
  • 12 red dates
  • 1¼ lbs lotus root ((600g))
  • 3/4 lb bone-in pork ribs (** (350g))
  • 10 cups water ((2.4 liters))
  • Salt (to taste)

Instruction

  • Rinse and soak peanuts and red dates for 30 minutes. Drain. Peel lotus root with vegetable peeler. Cut lotus root cross-wise into ¼-inch thick slices.
  • Place all ingredients in a large pot and bring to a boil. Reduce heat to low and allow soup to simmer for 1½ to 2 hours. Skim off scum appearing on the surface. Season with salt.
  • Serve warm in individual bowls.
