Ingredients

The following ingredients have 4 Servings
  • 2 large lobster tails, cooked
  • 1/8 cup chopped celery
  • 1/4 cup mayonnaise
  • 1 Tablespoon fresh lemon juice
  • pinch cayenne pepper
  • 4 Tablespoons butter
  • 4 hot dog buns or outdoor rolls
  • shredded lettuce (optional)
  • lemon wedges (optional)

Instruction

  • I purchased lobster tails and cooked them on the grill. You can get them pre-cooked or just cook a whole lobster!
  • Once the meat is cooked, chop it into bite sized chunks and put it in a large bowl.
  • Mix in all the ingredients except the butter and rolls. You can add a little more mayo if you like it wetter and a little more (or less) cayenne to suit your tastes. Set the mixture aside.
  • Melt the butter and brush the insides of the rolls with it. 
  • Toast them in the oven or on the grill.
  • Fill each roll with 1/4 of the lobster mixture, a little shredded lettuce and serve. A lemon wedge is a good garnish with these rich and delicious rolls.
