Ingredients
The following ingredients have 4 Servings
- 2 large lobster tails, cooked
- 1/8 cup chopped celery
- 1/4 cup mayonnaise
- 1 Tablespoon fresh lemon juice
- pinch cayenne pepper
- 4 Tablespoons butter
- 4 hot dog buns or outdoor rolls
- shredded lettuce (optional)
- lemon wedges (optional)
Instruction
- I purchased lobster tails and cooked them on the grill. You can get them pre-cooked or just cook a whole lobster!
- Once the meat is cooked, chop it into bite sized chunks and put it in a large bowl.
- Mix in all the ingredients except the butter and rolls. You can add a little more mayo if you like it wetter and a little more (or less) cayenne to suit your tastes. Set the mixture aside.
- Melt the butter and brush the insides of the rolls with it.
- Toast them in the oven or on the grill.
- Fill each roll with 1/4 of the lobster mixture, a little shredded lettuce and serve. A lemon wedge is a good garnish with these rich and delicious rolls.
