Ingredients

The following ingredients have 4 Servings
  • 1 (5-6 ounce) bag sweet potato chips
  • 4-6 ounces shredded, cooked chicken or taco meat
  • 1 ½ cups shredded cheese (such as cheddar, Monterey jack, pepper jack, a Mexican-inspired blend or mozzarella)
  • ½ cup black or pinto beans, drained and rinsed
  • For Topping: Fresh cilantro, diced tomatoes, salsa, sliced green onions, diced red onion or bell pepper, black olives, diced avocado or guacamole, sour cream, etc. 

Instruction

  • Preheat the oven to 375℉.
  • Layer ½ of the sweet potato chips onto a baking sheet or or large casserole dish. 
  • Top with ½ of the chicken or taco meat, beans, and cheese. 
  • Repeat with this layer, ending with cheese on top. Place baking sheet or dish into the oven and bake 8-10 minutes or until cheese is melted.
  • Remove pan from oven, add salsa, diced tomatoes, sliced or diced onions, chopped cilantro, avocado or guacamole, sour cream, etc.
  • Serve with optional lime wedges.
