Ingredients
The following ingredients have 40 Servings
- 1 kg continental flour
- 250 g unsalted butter cooled melted
- 4 egg room temperature
- 2 egg yolks
- 1 tbs dry yeast
- 500 ml milk room temperature
- 36.00 g vanilla sugar
- 1 cup icing sugar
- 300 g continental flour
- 150 g unsalted butter room temperature
- 770 g canned apple pieces
- 2 1/2 tbs icing sugar
- 1/2 tsp ground cinnamon
- 1/2 cup sultanas soaked
- 150 g icing sugar
- 8 g vanilla sugar
Instruction
- Preheat oven to 170C. Dissolve yeast in warm water and soak sultanas in hot water. In a separate bowl, combine 2 eggs and 150g of the milk together (this will be used for brushing).
- Apple mixture: Gently mix together apple, icing sugar, cinnamon powder and sultanas. Don't mix this to long because it will be to thin.
- Streusel: In a bowl, mix together continental flour, unsalted butter and vanilla sugar. If the mixture needs more butter, add it.
- Sift the flour into a big bowl, add butter, half the remaining milk, 2 eggs and yeast to start make a dough. Add rest of the milk and make nice elastic dough.The dough can't be sticky and stick on the wall of the bowl. If need more flour add it, but can't be sticky.
- Transfer the dough on working surface and cut in half. With rolling pin, roll out to square shape 1cm thick. Cut small square and top each one with apple mixture, then press the corners together, brush with egg and milk mixture and sprinkle with streusel.
- Put the small cakes on baking tray and bake in oven for 20 - 25 minutes or until golden brown.
- Serve dusted with icing sugar mixed with vanilla sugar and your favourite coffee or tea.
