Ingredients

The following ingredients have 3 Servings
  • 1 cup quinoa
  • 1 avocado
  • 1 cup artichoke hearts (sliced)
  • 2 limes (zested and juiced)
  • 3-4 tablespoons olive oil
  • 1/2 cup chopped cilantro
  • 3-4 cloves garlic (minced)
  • 1 small red onion (diced)

Instruction

  • Cook quinoa according to package directions.
  • In a small bowl combine lime juice, zest, olive oil and garlic.
  • In a large bowl combine all of the ingredients and toss until mixed.
