Ingredients
The following ingredients have 12 Servings
- 2⅔ cups less 1tbsp all-purpose/plain flour (11.29oz)
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ cup sugar
- ½ cup+1tbsp dark chocolate chips
- ⅙ teaspoon fine sea salt
- ¼ cup lime juice
- Zest of 3 limes
- 2 eggs
- ⅓ cup less 1tbsp vegetable oil
- 1 cup milk
Instruction
- Preheat the oven to 400 F/200 C/ gas mark 6. Lightly grease or line a muffin pan with 12 cases.
- In a large bowl combine the flour, baking powder, soda, sugar, salt and chocolate chips and stir thoroughly using a whisk.
- In another bowl whisk together the eggs, oil, milk, lime juice and zest until smooth. Pour in the dry mixture all at once and stir just to combine. Do not overmix the batter.
- Spoon the mixture into the muffin cases. Bake for 23 minutes in the centre of the oven. Remove from the oven and set aside for 10 minutes then transfer the muffins onto a rack.
