Ingredients
The following ingredients have 12 Servings
- 7.75 ounces (220g) honey graham crackers, about 15 sheets
- 2 teaspoons ground ginger
- 3/4 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- pinch of salt
- 4 tablespoons melted butter
- 2 tablespoons molasses
- 14 ounces (400g) House Foods soft tofu
- 14 ounces (400g) low-fat cream cheese, at room temperature
- 1 cup cane sugar
- 4 large eggs
- 2 1/2 tablespoons molasses
- 1 teaspoon pure vanilla extract
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon freshly grated nutmeg
- 1/4 teaspoon cloves
- pinch of salt
- [freshly whipped cream]
- mini gingerbread men ([I used this recipe])
Instruction
- Remove the block of soft tofu from the container and wrap it with 2 sheets of paper towel to absorb the moisture. Set it on a plate while you prepare the crust.
- Preheat oven to 350ºF (175ºC). Place an oven rack into the lower third position.
