Ingredients

The following ingredients have 12 Servings
  • 7.75 ounces (220g) honey graham crackers, about 15 sheets
  • 2 teaspoons ground ginger
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • pinch of salt
  • 4 tablespoons melted butter
  • 2 tablespoons molasses
  • 14 ounces (400g) House Foods soft tofu
  • 14 ounces (400g) low-fat cream cheese, at room temperature
  • 1 cup cane sugar
  • 4 large eggs
  • 2 1/2 tablespoons molasses
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 1/4 teaspoon cloves
  • pinch of salt
  • [freshly whipped cream]
  • mini gingerbread men ([I used this recipe])

Instruction

  • Remove the block of soft tofu from the container and wrap it with 2 sheets of paper towel to absorb the moisture. Set it on a plate while you prepare the crust.
  • Preheat oven to 350ºF (175ºC). Place an oven rack into the lower third position.
