  • 1 pound (about 2 small) boneless skinless chicken breasts (pounded thin)
  • Salt and pepper
  • 12 ounces rigatoni pasta
  • 1 tablespoon butter
  • 8 ounces mushrooms
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup sherry or Marsala* (plus more for deglazing)
  • 1 1/2 cups half and half*
  • 1/4 cup shredded Parmesan cheese (plus more for topping)
  • Parsley (optional, roughly chopped for garnish)
