Ingredients

The following ingredients have 9 Servings
  • 2 1/4 cups Blue Bunny Vanilla Ice Cream
  • 1 cup fresh raspberries
  • 2 Tbs lemon juice (fresh)
  • 1 cup powdered sugar
  • 1 cup butter (softened)
  • 1/4 tsp salt
  • 21/2 cups of flour

Instruction

  • Preheat oven to 375
  • Using a hand mixer, mix together all ingredients. It will look like sand
  • Using your hands, push it together to form a ball
  • Roll it out on a smooth surface with rolling pin until about a 3/4 centimeter thick
  • Use a round cookie cutter or biscuit cutter (2 inch) to form cookies.
  • Put cookies on a cookie sheet lined with parchment or a baking mat (may need to use a spatula to transfer without them falling apart)
  • Bake on an ungreased baking sheet for 6 minutes. (do not brown)
  • Let cool on pan 1 minute
  • Move to a cooling rack
  • Using 1/4 cup of vanilla ice cream and a few berries, mix together and using biscuit cutter or cookie cutter form into same shape as cookies (See photo)
  • Put between 2 cooled cookies
  • Enjoy!
