Ingredients

The following ingredients have 10 Servings
  • 180 g butter melted
  • 150 g caster sugar
  • 100 g polenta
  • 150 g almond meal
  • 1 tsp baking powder
  • 1 lemon zested
  • 1 tsp icing sugar sifted *to decorate
  • 3 egg

Instruction

  • Preheat oven to 180C. Grease and line the bottom of a round cake tin with baking paper.
  • Mix sugar and melted butter together in a large bowl. Slowly add one egg at a time along with the polenta, almond meal and baking powder. Add the lemon zest and mix until well combined.
  • Pour into prepared cake tin and bake for 40 mins. Once cooled slightly, add sifted icing sugar. Serve with ice cream and passion fruit pulp.
