Ingredients

The following ingredients have 2 Servings
  • 1 6- oz. filet pacific cod
  • 1/3 cup shelled, roasted salted pistachios
  • 1/3 cup fat-free Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lemon zest (or can sub dried)
  • 1 tablespoon minced fresh parsley (or can sub dried)
  • Cooking spray
  • Salt and pepper to season

Instruction

  • If frozen, thaw fish in refrigerator for about 6 hours or for 15 minutes in bowl of water.
  • Pat filet dry with paper towel and cut into two portions (or 3 or 4 portions depending on size of air-fryer basket). Set aside.
  • Place pistachios in small food processor and process until coarsely chopped. Set aside.
  • In small bowl, mix up yogurt, lemon juice, lemon zest and parsley. Set aside.
  • Spray basket of Air Fryer with cooking spray.
  • Arrange cod pieces in basket, season lightly with salt and pepper.
  • Use spoon to spread around a yogurt mixture on top of fish. Next use another spoon to layer on chopped pistachios, lightly pressing down with fingers to adhere the “crust.”
  • Slide basket into Air Fryer and cook at 400F degrees for 6 to 8 minutes, or until tops of pistachios lightly browning and fish flaking but still moist.
  • Remove, plate and serve with lemon wedges.
