The following ingredients have 4 Servings

  • 2 cups granulated sugar
  • 2½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 3.4-oz. package pistachio pudding mix
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 Tbsp lemon zest (~2 lemons)
  • ⅓ cup fresh lemon juice (~2 lemons)
  • 2 tsp vanilla extract
  • ⅔ cup hot water
  • 2 cups unsalted butter (room temperature)
  • 1 3.4-oz. package pistachio pudding mix
  • 2 tsp vanilla extract
  • 5 cups powdered sugar
  • 3 Tbsp milk
  • 1 cup pistachios (chopped and toasted)
