Ingredients

The following ingredients have 4 Servings
  • 14 ounces kielbasa (cut into bite-sized pieces)
  • 4 russet potatoes (medium, peeled, cubed)
  • 1 onion (peeled, chopped)
  • 1/3 cup oil (divided, more if needed)
  • 2 teaspoons lemon pepper seasoning (divided, more or less to taste)

Instruction

  • Prepare the ingredients by slicing the kielbasa into bite-sized pieces. Wash, peel, and chop the potatoes into similar-sized cubes. Peel and chop the onion.
  • In a large non-stick skillet, heat HALF of the oil over medium-high heat. When the oil starts to shimmer, add the kielbasa and cook and stir until browned on all sides, about 8 minutes. Transfer to a small bowl and set aside.
  • Carefully add the rest of the oil to the skillet. Swirl the pan to heat. Add the chopped potatoes and onions to the skillet. Do not stir. Reduce heat to medium. Let cook untouched for about 7 – 10 minutes until the bottoms are golden brown and the onions start to soften.
  • Stir the potato and onion mixture, sprinkle with 1 1/2 teaspoons of lemon pepper seasoning and cook the other side for 7 – 10 minutes.
  • Add the kielbasa back to the pan, stir and cook until the potatoes are easily pierced with a fork.
  • Taste, add more lemon pepper seasoning to taste, and serve warm.
